Earlier this year, the Bel Cheese Academy launched a competition offering chefs in cost sector catering, restaurants, hotels and pubs across the UK, the exclusive chance to spend a day with Michelin and 5AA Rosette award-winning French Chef Jean-Christophe Novelli at the Bel Cheese Academy.
I recently spent the day cooking with Jean Christophe Novelli after winning the Bel foods competition, it was an amazing experience as I was shown some cookery great tips and recipes - thanks Jean.

After serving eight years in the Royal Navy, Paul bought "The Willow Restaurant" in Alford Lincolnshire where he won several awards. During this time he developed a traditional menu bringing back old english dishes putting a fashionable twist into each dish. Over time the restaurants reputation grew and grew even attracting film crews from BBC 2's Escape to the Country when they visited the town.

The competition was first set up to help raise awareness and give recognition to the very best eating places in the county. Its other aim was to try to raise industry standards. Judges are not just looking for good food; points are awarded for ambience, value for money and friendliness and knowledge of staff.
The overall sponsor of the competition is Tastes of Lincolnshire so extra points are given to places which not only use local food, they indicate this on the menu. It is also important, therefore, that members of staff are able to give customers information about the origins of the food on their plates.
Dishing up some excellent service earned The Willow Restaurant won a gold accolade from the Lincolnshire Life magazine.
